How to Plan a Chicken Breading and Marination Line?

Manage recipe consistency, the cold chain, production speed and clean-to-dirty flow with the right equipment.

The preparation line determines cooking capacity

If the fryer has high capacity but the marination and breading cannot prepare products at the same pace, it will not increase serving speed. The preparation line should be sized along with the recipe, batch size, and peak hour production.

The steps of marination, draining, coating, and transferring to the fryer for products coming from cold storage should follow a short and controlled route.

Decision between standard and vacuum marination

The standard marination unit might be suitable for longer processes and traditional recipes. Vacuum marination can shorten preparation time and provide cycle advantages during intensive production if the product and recipe are suitable.

If pre-marinated products are used, the need for equipment may be eliminated; however, supply dependency, recipe control, and future production commissioning plans should be evaluated separately.

  • Separate raw product entry from cooked product and serving routes.
  • Position hand-washing and equipment cleaning points close to the preparation area.
  • Protect flour and coating material storage from splashes and moisture.
  • Leave access space for end-of-day disassembly, sifting, and surface cleaning.
