Planning Starts From the Menu, Not the Equipment List
The right equipment set in a fast food kitchen cannot be determined without knowing which products will be prepared and in what sequence. Each of chicken, burger, fries, and snacks requires different prep areas, cooking times, and hot holding needs.
First clarify the main products, side items, portion sizes, and percentage of takeaway orders. This way, you can avoid unnecessary equipment investments and foresee bottleneck stations during busy service.
Design Capacity Based on Peak Hour, Not Daily Sales
- Target number of orders in the busiest 60 minutes.
- Quantity of main and side products per order.
- Cooking, loading, unloading, and portioning times.

Stations Should Follow the Product Flow Direction
Cold storage and prep area; cooking stations; hot holding, portioning, and delivery points should create an uninterrupted flow. The raw product route and cooked product route must be separated as much as possible.
Next to the fryer and grill, consider not only the equipment dimensions but also the lid movement, basket usage, service accessibility, and cleaning clearance. The total line under the hood must be measured accordingly.
