What is the key difference?

A pressure fryer utilizes controlled pressure built up within a sealed and secure cooking vat. In an open fryer, on the other hand, the product is fried in an oil vat under non-pressurized conditions. This difference affects not only the cooking time but also the internal moisture of the product, its outer texture, the recipes that can be applied, and the operational workflow.

Pressure systems excel for products where retaining internal moisture is key, such as bone-in or breaded chicken. Open fryers offer more flexibility in operations where fries, onion rings, nuggets, tempura, and diverse menu items are prepared at the same station.

When should you choose a pressure fryer?

  • If your main product is bone-in or breaded chicken and you use standardized recipes.
  • If cycle times during peak hours and consistent results in every batch are critical.
  • If you want to tie cooking temperature, time, and lid safety to a controlled process.

  • If you seek easy access and fast product turnover for recipes that do not require pressure cooking.

Do not make your decision based on capacity in liters alone

Oil volume is not the same as the amount of product that can be cooked in a single cycle. Basket design, product weight, recipe temperature, temperature recovery time, filtration, and consecutive cycle performance during peak hours must be evaluated together.
